Porchetta di Ariccia
Porchetta di Ariccia is a product made of cooked pig meat, typical of Ariccia, in the province of Rome.
On June 14, 2011, in Europe, Porchetta di Ariccia was declared as protected geographical indication. (IGP). One of the main distinguishing features of the product is the crispness of the crust. Its tasty meat has a color between white and pink and it is enriched by the skilful use of rosemary, black pepper and garlic.

The Mozzarella di Bufala Campana is a dairy product of Southern Italy, traditionally produced in Campania, especially in the provinces of Caserta and Salerno. The production of this typical cheese is also held in other parts of Campania and southern Lazio, Puglia and in the upper town of Venafro in the Molise region.
The term mozzarella comes from the name of the operation of mozzatura accomplished to separate the dough into individual pieces. It is often called the Queen of the Mediterranean kitchen, but also white gold or pearl of the table, in deference to the fine quality and taste of the food product.

Parmigiano Reggiano is a hard cheese typical of northern Italy, more precisely in the Po Valley (area between the west-central Emilia and Mantova). It is a dairy product made from cow milk partially skimmed; Parmesan boasts pretty good nutritional values: compared to most mature cheese, Parmesan cheese is less fat, more proteic, it contains less lactose and provides an excellent calcium concentration; the amount of sodium is significant, and also that of cholesterol. Since it is a DOP product (Protected Designation of Origin), Parmesan cheese is closely regulated by a production specification that guarantees (or standardizes) the overall quality.
